Recipe Roundup: The Big Bloggy Breakfast

February 20 is Big Bloggy Breakfast Roundup time over at Home But Not Alone. Mummymac is hosting the breakfast, so grab your frying pan and join in the fun! Follow the link to find some great recipes! Here are three of my breakfast favorites.

Fiesta Eggs is a wonderful dish because it’s so easy to prepare and really delicious. I posted the recipe previously, and you’ll find it here.

If you like granola, you’re gonna be happy to have this recipe for your files. It is healthy, makes a generous amount, and most importantly, tastes great! Try it layered with yogurt and fresh fruit for a delicious and gorgeous-looking breakfast parfait.

Favorite Homemade Granola

7 cups old-fashioned oatmeal (not quick-cook or instant)
2 cups shredded coconut
2 cups almonds, pecans, or walnuts, coarsely chopped
1/2 cup sunflower seeds
1/2 cup wheat bran
1/2 cup wheat germ
1 Tbsp cinnamon
1 tsp salt
1 Tbsp vanilla extract
2/3 cup honey
2/3 cup canola oil
1 cup raisins, dried cranberries, or diced apricots (add after granola is baked)

Combine ingredients except vanilla, honey, oil and dried fruit in a large bowl. In separate bowl, combine vanilla, honey and oil. Pour over oatmeal mixture and mix well. Your hands are going to be the best tool for the job. Spread onto large greased baking pan. Bake @ 350 degrees for 25-30 minutes, stirring after the first 10 minutes, then every 5 minutes thereafter until golden brown. Cool thoroughly, then add dried fruit. Store in airtight container.

I love breakfast breads, and these scones are delicious. Enjoy!

Buttermilk Currant Scones

4 c. flour
1/2 c. sugar
4 tsp. baking powder
2 tsp. finely shredded orange peel
1/2 tsp. baking soda
1/2 tsp. salt
2/3 c. butter
2 beaten eggs
1 c. buttermilk
1/2 c. currants, raisins or cranberries
Optional:
2 tsp. sugar
1/2 tsp. finely shredded orange peel
1 Tbsp. buttermilk

Stir together the flour, 1/2 c. sugar, baking powder, orange peel, baking soda, and salt. Using pastry blender, cut in butter until mixture resembles coarse crumbs. Make a well in center of dry mixture. Combine egg, buttermilk, and raisins. Add all at once to dry mixture, stirring just until moistened. Turn onto lightly floured surface and knead 10-12 times until nearly smooth. Divide into two pieces. Pat each piece into 7 inch circle. Cut into 8 wedges. Place wedges on ungreased baking sheet. Optional: Combine sugar and orange peel. Brush wedges with buttermilk and sprinkle with sugar/peel mixture. Bake at 400 degrees for 12-15 minutes, or until golden. Serve hot.

Variation: Add chopped pecans or sliced almonds

    For all those thinking about that granola….once you try it you’ll never go back to any other kind again. It is delicious!!!!! Thanks for those other recipies, Rosemary. I think I might try my hand at those scones…yummy!

    Thanks for the recipies, I’ve never tried scones but my husband loves them and here in GR they are not very good. He claims in England only so I may surprise him.
